Class III Caramel Colours, represented by the E number E150c, are known as ‘Ammonia Process Caramels’ or ‘Beer Grade Caramels.’ These deep red-brown, thick liquids within the Class III category result from precise sugar cooking and feature a significant positive colloidal charge.

To enhance caramelization, food-grade acids, bases, and ammonium compounds are used while avoiding sulphites. This process yields E150c colours ranging from light brown to rich dark red-brown, imparting a reddish-brown hue to the final product.
