Class I (E150a)- Caustic Caramel Colour
Class I Caramel Colours (E150a), aka “Plain” or “Spirit” Caramels, are deep red-brown liquids made by carefully cooking sugar and other approved ingredients. These also come in powder options based on your needs. Ideal for the liquor industry and a variety of food and beverage industries, they offer great alcohol stability and a yellowish hue. Class II (E150b)- Caustic Sulphite Caramel Colour
Class II Caramel Colour (E150b), or ‘Caustic Sulphite’ Caramel, adds a subtle yellow hue and excels in stability against tannins and acids. This is versatile and reliable, perfect for alcoholic beverages, wines, and acidulated drinks needing a yellow or reddish hue.
Class III (E150c)- Ammonia Caramel Colour
Class III Caramel Colours (E150c), aka ‘Ammonia Process’ Caramels, are rich red-brown caramels available in both liquid and powder form made from carefully cooked sugar. With a positive charge, these caramel colours are perfect for beers, lagers, bakery treats, dairy, sauces, pet food, and more.
Class IV (E150d)- Sulphite Ammonia Caramel Colour
Class IV Caramel Colour (E150d), known as ‘Ammonia Sulphite’ or ‘Acid Proof’ Caramel, is a black-brown hued caramel with a negative charge, tailored in liquid or powder form based on your needs. Perfect for soft drink concentrates, fruit candies, juices, and flavourings. This can also be treated as a general-purpose colouring agent.

Precise Caramelisation
A typical cook begins by adding the sugar syrup (derived from cane sugar) in a cooker while the contents are agitated. Reactants are added (as recommended by CODEX, FCC, JECFA, FSSAI, etc.) in accordance with formulation & also depending on the Class (Type) of Caramel Colour manufactured. Heating is commenced, the cooker is then closed & the cook allowed to continue at the pre-determined pressure & temperature.
Filtration & Storage
Once the colour formation reaches its ‘Target Colour’, the laboratory instructs the operators to terminate heating and stop the cook. The liquid product is then cooled and filtered to storage, where it is tested for specification compliance, then pumped into final storage from where it is ready for packaging.
Transformation & Packaging
The caramel colour can be either packaged directly as a liquid for ease of use or transformed into a convenient powder through spray drying. Both the liquid and powder forms are then packaged according to your needs.
